Burgers don’t have to be unhealthy, they can be made to be a delicious and nourishing meal that the whole family enjoys. These chicken & bacon burgers are the perfect weekend lunch or quick dinner. They are full of fresh flavours & are super easy to whip up. News flash… you don’t need to add buns or bread, they are super filling and tasty without adding any processed ingredients.
This recipe makes 4 serves.
INGREDIENTS
500 grams of chicken mince
1 egg
1/2 onion
1 clove of garlic
1 small bunch of coriander
Fresh ginger – garlic clove size
Salt & pepper to taste
4 rashers of bacon
1 tomato
1 beetroot
4 lettuce leaves
Oil – olive or coconut
DIRECTIONS
- In the food processor place the un-chopped garlic, peeled ginger, onion (halved) & coriander, whiz until finely chopped. If you don’t have a food processor, press the garlic & ginger then finely dice the onion & coriander with a sharp knife
- Place finely diced ingredients in a mixing bowl with the minced chicken, egg, salt & pepper
- With your hands or a fork mix until all the ingredients are combined
- Heat a large pan with a little oil
- Spoon the mixture into the pan making two patties, quarter of the mixture per pattie
- Pan fry one side, turn & cook the other side. Repeat with the other two patties
- Fry the bacon, slice the tomato, wash & dry the lettuce
- Peel the beetroot, cut into four pieces & place into the food processor to make into a little fresh salsa. Or you can grate the beetroot
- Assemble the lettuce on the plates & top with chicken burger, bacon, tomato & beetroot
- ENJOY!

Hi Varnz. Thanks for stopping by. It is amazing how many people are allergic to eggs, it must be annoying for you because eggs are in everything. With this recipe the egg is simply to hold the chicken mince together, so you could simply make it without and hopefully your burgers will hold together well enough without the egg. You could try flax eggs 1 teaspoon flax seed to 2.5 teaspoons of water equals 1 egg. Mix them together and let the mixture sit for a couple of minutes then use in exactly the same way you would an egg.
