Sweet Potato, Tuna & Chilli Patties

BE Sweet potato pattiesThese little gems are an fantastic option for any meal of the day, breakfast, lunch or dinner. You can’t really go wrong serving these because they are simple to make, yet so delicious and everyone will love them! Any variety of sweet potato can be used including kumera.

Ingredients
  • 4 medium sweet potato
  • 1 onion
  • 1 clove garlic
  • 1 red chilli
  • 1 tablespoon olive oil
  • 2 cans of tuna in spring water
  • 1 handful fresh basil
  • Salt & pepper to taste
  • 2 tablespoons olive oil or coconut oil
Instructions
  1. Peel the sweet potato and cut into quarters, boil in a saucepan of water over a medium heat until they are tender. This will take about 20 minutes.
  2. In the mean time, finely chop the onion, crush the garlic, finely slice the chilli and basil.
  3. In a small frying pan over a medium heat place 1 tablespoon of olive oil.
  4. Add the onion and garlic, saute for a few minutes until translucent then add the chilli and cook for 1 more minute, then take off the heat.
  5. Once the sweet potato is cooked, drain and mash using a fork or potato masher.
  6. Add the two cans of tuna, basil, salt, pepper and onion & chilli mixture.
  7. Mash all the ingredients together.
  8. Heat a large pan on a medium heat with some of the remaining olive or coconut oil.
  9. Form the patties by using a large tablespoon and place 3 patties in the pan to cook.
  10. Flip once the pattie is golden brown and repeat on the other side. Repeat until they are all cooked.
  11. Serve with salad. Enjoy!

    Hi there,

    I had a bit of trouble getting these patties to hold together. Any advice?

      You could put half a table spoon of coconut flour in them to see if that helps. Maybe your mix to to watery, if that is the case you could also try steaming your sweet potato rather than boiling it. Just a couple of ideas. 🙂

      Hi Gemma 🙂 You could use chicken, beans, chickpeas, capsicum or other veg. There are so many options. Or just leave it out totally. I hope that you love them xx

    I also had trouble with them holding together, they would keep breaking when I tried to flip them. In the end I added a few eggs and baked them in a silicone muffin tray, they turned out well 🙂

      Hi Molly. That is no good, it sounds like there wasn’t enough moisture in the patties. I am glad that they turned out for you in the end 🙂 xx

    I couldn’t get my patties to brown up! Any advice?

      Hi Tahniya. Maybe your pan was not hot enough. With the coconut flour coating they should brown up nicely. You could also try a different oil in the pan, coconut oil works really well for these. Good luck for your next try. xx
