  • 1 onion, finely diced
  • 1 teaspoon fresh ginger, grated
  • 2 cloves garlic, grated
  • 1 handful fresh parsley, chopped
  • ½ orange’s rind, grated
  • ¼ cup desiccated coconut
  • ¼ cup dried cranberries, dried
  • Salt & pepper to taste
  • Sticky Orange Sauce
  • 3 tablespoons of coconut oil
  • 1 onion roughly chopped
  • 1 teaspoon grated ginger
  • 1 garlic clove, grated
  • Rind of one orange, grated
  • 1 cup orange juice
  • 1 tablespoon honey
  • 2 tablespoons of soy sauce
  • 2 sprigs of thyme
Instructions
  1. Pre-heat the oven to 180 degrees Celsius and prepare a baking tray by lining it with baking paper. In a large bowl place, the turkey mince, diced onion, ginger, garlic, parsley, orange rind, desiccated coconut, salt and pepper. With your clean hands, fold the ingredients together until it is mixed together. Roll 18 round meatballs out of the mixture and place in rows on the baking tray. Bake for 15 minutes in the oven.
  2. In the mean time make the sticky orange sauce. Place a saucepan on a medium heat on the stove. Add the oil, garlic, ginger and onion. Sauté for 3 minutes then add the orange juice, honey, soy sauce, rind and thyme. Simmer on the stove for 10 minutes or until reduced down. Add the cooked meatballs to the sauce and simmer on low for 5 minutes or until the sauce becomes sticky.
  3. Remove the meatballs from the sauce and place on a serving plate with a fancy tooth pic in each one. Sieve the sauce to remove the chunky ingredients, place sauce in a small dipping dish and serve with the meatballs.
