Sticky Date Pudding with Salted Caramel Sauce

I absolutely love converting old favourites into new healthy versions. Sticky date is my husbands favourite dessert of all time, so I decided that I would make him a real food version for a rainy Friday night treat. It turned out to be super delicious and the perfect treat if you are a sticky date lover!

You can have this as either a dessert or as a nice bit of cake for a day time treat. This recipe is gluten, dairy and refined-sugar free. It is not difficult to make at all and it is really yummy with out the sauce so you can skip that if you just want the cake.

Ingredients
  • To Make The Pudding
  • 1½ cup dried dates
  • ½ cup coconut flour
  • 1 teaspoon baking soda
  • Dash of vanilla
  • Pinch of salt
  • 1 ripe banana
  • 5 eggs
  • 2 tablespoons coconut oil
  • ½ cup water
  • To Make The Sauce
  • 1 cup dried dates
  • 2 cups water
  • 2 tablespoons coconut oil, melted
  • Dash of vanilla
  • 1 teaspoon salt
Instructions
  1. Pre-heat the oven to 180 degrees celsius and line a round or loaf baking pan with baking paper.
  2. In the food processor place 1 cup of dates and blitz until very fine.
  3. Add the coconut flour and baking soda, process until combined.
  4. Add the other ½ cup dates, banana, eggs, coconut oil, vanilla, salt and water, blitz until combined but leaving some of the dates chunky.
  5. Scrape out of food processor and pour into the lined baking pan.
  6. Place in the over for 30 minutes or until a skewer comes out clean.
  7. To make the sauce, place the dates and 1 cup of water on the stove top over a medium heat. Simmer for 10 minutes or until the dates are soft.
  8. Transfer into the food processor and blitz, slowly adding the other cup of water.
  9. Process until very smooth.
  10. Add the coconut oil, vanilla and salt and process to combine.
  11. Add more water if you would prefer the sauce thinner. Transfer back to the saucepan and simmer on the stove top for a few minutes.
  12. Pour over the warm pudding and serve while hot.

    Hi Caralee! This recipe looks amazing! I’m just wondering if I can sub the coconut flour for something else? I live in France and it’s very difficult to find and crazy expensive.

      Hi Grace. If you want you can make you own coconut flour by grinding down shredded coconut in a blender or food processor. Or you could use approx 3/4 cup of almond meal, maybe add a little more, just see how you go. 🙂 x

    Hi Caralee, I’m just in the middle of making this delicious pudding, and noticed you’ve forgot to mention when to add the baking soda? I’m thinking it’s added along with all the other ingredients (no 4)?? This is what I’ve done anyway, am sure it won’t make that much of a difference when it’s added, as long as it is 🙂
    Smells delicious already !!
