My husband absolutely loves sticky date pudding, everytime we go to a restaurant and sticky date pudding is on the menu he finds it hard to resist and I am not far behind him! I have been thinking about how I could make this recipe work using only real ingredients for a while now so when I nailed it the first time around I was really happy. It tasted just as good as any other sticky date pudding that I have had and was super easy to make without all the processed ingredients. All of that makes this a winning recipe in our house!

Ingredients
  • Pudding
  • 1 cup almond meal
  • ¼ cup coconut flour
  • 1 cup dried dates
  • ½ cup medjool dates
  • 2 teaspoon cinnamon
  • ½ teaspoon ginger
  • 1 teaspoon baking soda
  • 2 tablespoons apple cider vinegar
  • 3 eggs
  • pinch of salt
  • 2 tbsp oil, (olive or coconut)
  • 2 tbsp chia seeds
  • ¼ cup water
  • Sauce
  • 1 cup medjool dates
  • ¾ cup water
  • 2 tablespoons coconut oil
  • 1 teaspoon vanilla extract
  • Pinch of salt
Instructions
  1. Preheat the oven to 180 degrees and prepared muffin pans with a light spray of olive oil.
  2. Soak the chia seeds in the ¼ cup of water and set aside.
  3. Chop roughly the ½ cup medjool dates and set aside.
  4. Place all other dry ingredients, almond meal, coconut flour, dried dates, cinnamon, ginger, baking soda and salt into the food processor & blitz until the dates are well broken down.
  5. Place all of the dry ingredients and chopped medjool dates in a large mixing bowl.
  6. In a separate bowl beat the eggs, soaked chia seeds, apple cider vinegar and oil until well combined.
  7. Combine the wet ingredients with the dry ingredients and mix together but don't over beat.
  8. Spoon the mixture into the muffin tin and bake for 15 – 20 minutes or a skewer comes out clean.
  9. While the sticky date puddings are baking you can make the sauce.
  10. Place the pitted medjool dates in a food processor and make into a paste. Add the water, coconut oil and vanilla and process until smooth.
  11. Transfer into a saucepan and simmer on a low heat for five minutes, stirring as required.
  12. Poor the warm sauce over the top of the pudding and serve.

    Hi Caralee can you tell me what you use for dried dates as opposed to medjool dates. thanks 🙂

      Hi Jacqui. I just use dried dates from the supermarket usually found in the dried nuts and fruit section.
