My husband absolutely loves sticky date pudding, everytime we go to a restaurant and sticky date pudding is on the menu he finds it hard to resist and I am not far behind him! I have been thinking about how I could make this recipe work using only real ingredients for a while now so when I nailed it the first time around I was really happy. It tasted just as good as any other sticky date pudding that I have had and was super easy to make without all the processed ingredients. All of that makes this a winning recipe in our house!

Sticky Date Pudding with Gooey Sauce

Ingredients
- Pudding
- 1 cup almond meal
- ¼ cup coconut flour
- 1 cup dried dates
- ½ cup medjool dates
- 2 teaspoon cinnamon
- ½ teaspoon ginger
- 1 teaspoon baking soda
- 2 tablespoons apple cider vinegar
- 3 eggs
- pinch of salt
- 2 tbsp oil, (olive or coconut)
- 2 tbsp chia seeds
- ¼ cup water
- Sauce
- 1 cup medjool dates
- ¾ cup water
- 2 tablespoons coconut oil
- 1 teaspoon vanilla extract
- Pinch of salt
Instructions
- Preheat the oven to 180 degrees and prepared muffin pans with a light spray of olive oil.
- Soak the chia seeds in the ¼ cup of water and set aside.
- Chop roughly the ½ cup medjool dates and set aside.
- Place all other dry ingredients, almond meal, coconut flour, dried dates, cinnamon, ginger, baking soda and salt into the food processor & blitz until the dates are well broken down.
- Place all of the dry ingredients and chopped medjool dates in a large mixing bowl.
- In a separate bowl beat the eggs, soaked chia seeds, apple cider vinegar and oil until well combined.
- Combine the wet ingredients with the dry ingredients and mix together but don't over beat.
- Spoon the mixture into the muffin tin and bake for 15 – 20 minutes or a skewer comes out clean.
- While the sticky date puddings are baking you can make the sauce.
- Place the pitted medjool dates in a food processor and make into a paste. Add the water, coconut oil and vanilla and process until smooth.
- Transfer into a saucepan and simmer on a low heat for five minutes, stirring as required.
- Poor the warm sauce over the top of the pudding and serve.

Hi Jacqui. I just use dried dates from the supermarket usually found in the dried nuts and fruit section.
