Spiced Carrot Cake Slice

This slice is delicious and super easy to make. The ingredients are everyday items that you should already have available in your pantry, so no need to rush out to buy special ingredients, you can make this right now! This is the perfect refined sugar, gluten and dairy free snack or after dinner treat that the whole family will love.

Serves: 20
Ingredients
  • 1 cup raw cashew nuts
  • 1 cup dried dates
  • ½ cup sunflower seeds
  • 1 cup grated carrot
  • 1 tablespoon honey
  • ½ teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon dried ginger
  • 1 tablespoon coconut oil, melted
Instructions
  1. Place the cashews and dates in a food processor and whiz until ground down.
  2. Add the grated carrot, sunflower seeds, honey, cinnamon, nutmeg, ginger and coconut oil and mix through until all ingredients are combined.
  3. Line a baking dish approx 20x20 cm with baking paper. Press the mixture into the baking dish and place in the fridge to set for 1 hour.
  4. Cut into 16 - 20 squares. This will last in the fridge for 5 days.
