Ingredients
- 1 cup raw cashew nuts
- 1 cup dried dates
- ½ cup sunflower seeds
- 1 cup grated carrot
- 1 tablespoon honey
- ½ teaspoon ground cinnamon
- ½ teaspoon ground nutmeg
- ¼ teaspoon dried ginger
- 1 tablespoon coconut oil, melted
Instructions
- Place the cashews and dates in a food processor and whiz until ground down.
- Add the grated carrot, sunflower seeds, honey, cinnamon, nutmeg, ginger and coconut oil and mix through until all ingredients are combined.
- Line a baking dish approx 20x20 cm with baking paper. Press the mixture into the baking dish and place in the fridge to set for 1 hour.
- Cut into 16 - 20 squares. This will last in the fridge for 5 days.
