There is no reason why you can’t enjoy a beautiful fresh salad for breakfast, and there is no better combination than smoked salmon and eggs. Try this recipe and then add your own spin to it.
Smoked Salmon

Ingredients
- 1 cup chopped cos lettuce and rocket or other salad greens
- 1 handful of cherry tomatoes, halved
- ½ avocado, sliced
- 1 radish, thinly sliced
- 1 slice smoked salmon
- 1 boiled egg
- Olive oil to taste
- Salt and pepper to taste
Instructions
- Lay the rocket and cos lettuce on a serving plate. Place the halved tomatoes, sliced avocado and sliced radish around the plate on top of salad greens. Break up the smoked salmon and layer it over the salad.
- To boil the egg to perfection, bring a small pot full of water to the boil. Place the egg in the water to simmer for 6 minutes. Remove the egg after 6 minutes and peel under cool water. Place the peeled egg on top of salad.
- Drizzle with the olive oil and season with salt and pepper to taste.
- SERVES 1
