Rolled Cucumber & Smoked Salmon Canapes

Rolled Cucumber Canepe
As we are very quickly approaching Christmas & that we are now officially in the midsts of the silly season, it is nice to have a couple of little canapé ideas up your sleeve. My friend held a wonderful Christmas party & I took these along to contribute to the nibbles that were on offer. They were so easy to make & better still everyone loved them & I took home an empty platter. That equals recipe success! These treats do contain dairy.

INGREDIENTS

4 lebanese cucumbers
1 tub cream cheese
5 sprigs of dill
1 fillet of smoked salmon
Salt & pepper to taste

DIRECTIONS

  1. Wash the cucumbers & cut the ends off. With a peeler, shave off the flesh into long ribbons
  2. In a food processor, place the finely chopped dill, smoked salmon fillet, tub of cream cheese & salt & pepper
  3. Blend on high until the mixture is evenly blended
  4. Lay out the cucumber ribbons in a row ready to stuff with the mix
  5. With a teaspoon, place a dollop of the salmon mix onto the end of each cucumber ribbon
  6. Roll the ribbon up and fix with a toothpick
  7. Place rolls neatly in a row on a platter, cover & place in the fridge until you are ready to serve
  8. Make sure you try one before your guests scoff them down!

    I’m new to all of this but have done a couple of your recipes and they have been delicious! But, I’m confused about some things, for example using cream cheese in the above recipe – is cream cheese not processed?

      Hi there Charlotte. Thanks for stopping by. As a general I don’t use any processed foods in my recipes as you know, however I have uploaded this one & also a Sticky Rice recipe which both use one ingredient outside of ‘real food’. You could make this recipe using home made mayo instead of the cream cheese to keep in real. I really love cheese & that is my treat once & a while. Some cheeses are highly processed & others are straight from the source with no processing. Dairy is a hairy one for a lot of people!
