This muesli is so full of goodness & crunch that it is just ridiculous! It is super yummy and so amazingly good for you. If you have all the ingredients on hand, it takes less than ten minutes to make and will keep in an airtight jar for months.
Summer is just around the corner and there are loads of delicious fruits becoming available, which is the perfect way to enjoy this muesli. I had this for breakfast yesterday with sliced papaya, strawberries and passion fruit, it was absolutely delicious and very satisfying.
I find that buying healthy muesli like this one, can be very expensive, so making my own for quarter of the price is the perfect idea. This batch will be the yummiest muesli that you have ever had, I promise!
- 1 cup date
- 1 cup almonds
- ½ cup macadamia
- 1 cup pumpkin seeds
- 1 cup sunflower seeds
- 1 cup shredded coconut
- ½ cup gojo berries
- ¼ cup sultanans
- ½ cup seseme seeds
- 1 teaspoon cinnamon
- 1 teaspoon nutmeg
- To start with place the dates in a food processor and pulse until they are broken down to smaller pieces.
- Add the almonds and pulse a few times until the almonds chopped, it is nice to have some chunky bits remaining in the mixture, so don't over chop.
- Add all the remaining ingredients and pulse just enough that it mixes all the ingredients together without breaking them down too much.
- Place in an air tight jar and store until it is eaten.
