Raspberry & Almond Blondie 3You know when you just feel like something yummy?! This is it! You should easily have all the ingredients in the pantry and it takes no time to throw together plus it is totally delicious!

I took this to my office for morning tea and everybody absolutely loved it! This little treat is so quick and easy to throw together with just a handful of whole ingredients and goes with a cup of tea perfectly!

Ingredients
  • 1 cup blanched almond meal
  • ¼ cup arrowroot powder
  • ½ teaspoon baking soda
  • ½ teaspoon cinnamon
  • Pinch of salt
  • 2 eggs
  • ¼ cup honey
  • ¼ cup coconut oil
  • 1 teaspoon vanilla extract
  • 1 cup frozen raspberries
  • ¼ cup sliced almonds
Instructions
  1. Pre-heat the oven to 180 degrees celsius.
  2. In a large bowl or food processor, place the dry ingredients and mix together.
  3. In another bowl whisk together the wet ingredients then pour the wet ingredients into the dry mixture.
  4. Combine the mixture together. Add the frozen raspberries by folding them into the mixture.
  5. Pour the mixture into a small to medium sized square or rectangle baking dish that has been lined with baking paper.
  6. Sprinkle the sliced almonds on the top and place in the oven for 25 minutes or until a skewer comes out clean.

    can u substitute anything for the arrowroot powder?

      Hi Sara. You could substitute it with more almond meal. That will work I am pretty sure 🙂

    I absolutely love your recipes, so does my family. I just made both banana and pecan loaf yesterday and its almost gone. Just a question, would you have any substitution for the arrowroot .
