Apple and Pecan Pie

Paleo Apple Pie portraitI used to love apple pie, but I have not made it since my ‘real food pledge’ because I thought that it would not be the same without a yummy pastry pie crust. That was until I stumbled across a coconut flour pie crust recipe on Coconut Mama.

Caralee with Apple PieThis pie crust recipe is really simple and only uses a handful of ingredients. As soon as I saw the recipe my instant thought was ‘Apple Pie’! It was also perfect timing because for some reason everyone in my house has gone off eating apples and so I have a fridge full of them.

The coconut flour pie crust recipe could be used for all sorts of delicious sweet pies, but here I will show you how to use the crust to make a apple pie with maple and pecan. This beautiful pie is gluten, dairy and sugar free, and completely delicious!

Serves: 8
Ingredients
  • Crust
  • ½ cup coconut oil or butter, melted
  • 2 eggs
  • ¼ teaspoon salt
  • ¾ cup coconut flour
  • 1 tablespoon natural maple syrup
  • Filling
  • 6 medium apples, peeled
  • 2 tablespoons coconut oil
  • ⅔ cup water
  • 1 teaspoon ground cinnamon
  • 3 tablespoons natural maple syrup
  • Pinch of salt
  • 1 tablespoon of maple syrup, to glaze
  • ¼ cup pecan nuts
Instructions
  1. To make the crust preheat oven to 180 degrees and prepare a pie dish by greasing and lining the base with baking paper.
  2. In a medium bowl beat the coconut oil or butter, eggs, maple syrup and salt together with a fork.
  3. Slowly add the coconut flour. Stir until dough holds together.
  4. Roll the dough into a ball, then pat into the pie dish.
  5. Prick the dough with a fork.
  6. Bake for 8 minutes or until lightly brown.
  7. For the filing, peel and core the apples, then finely slice the apples.
  8. Place a saucepan on the stove over a medium heat, add 2 tablespoons of coconut oil and the apples and caramelise the apples for a few of minutes.
  9. When the mixture starts to dry add a little water and let reduce, continue to do this until all the water has been reduced, stirring so that the apples don't stick to the bottom of the saucepan.
  10. Add the cinnamon, pinch of salt and maple syrup, let the mixture simmer for a couple of minutes until it caramelises.
  11. Place the apple mixture into to pie case and top the apple with the pecans.
  12. With a brush glaze the pecan nuts with the 1 tablespoon of maple syrup
  13. Place in the oven for 10 minutes, keeping an eye on the crust as to not over cook.
  14. Serve hot or let cool and serve cold.
