Apricot and Macadamia Slice

I love this slice, it is so full of flavour, apricots and macadamia nuts are a match made in heaven! There are no sweeteners added to this slice, the apricots and dates provide enough natural sweetness but if you wanted to you could add a little drizzle of honey.

This no bake slice is so easy to make and it is really delicious. I made this by placing all of the ingredients into the food processor in the order in the directions and then pressed the mixture in a cake tin to set in the fridge. It could not be more simple to create a healthy home-made treat!

The ingredients are held together with coconut oil so this slice needs to stay refrigerated, especially if you live in a warmer climate like I do. I hope you enjoy this real food treat as much I did!

Ingredients
  • 1 cup dried dates
  • 1 cup raw almonds
  • 1 cup desiccated coconut
  • 1 cup dried apricots
  • 1 cup macadamia raw nuts
  • 1 cup shredded coconut
  • ¼ cup melted coconut oil
  • 1 teaspoon vanilla extract
  • Sprinkle sea salt
Instructions
  1. Line a baking with baking paper and set aside. (the size is up to you, I use a medium size)
  2. It a food processor place the dates, almonds and desiccated coconut, whizz until a very fine crumble. Depending on your food processor you may need to do this in batches.
  3. Chop the apricots and macadamia nuts into small pieces, however keeping them visibly chunky.
  4. Add to the mixture along with the shredded coconut. Mix together until combined.
  5. Add the coconut oil, vanilla extract and salt, combine all the ingredients ensuring that all the dry ingredients are coated.
  6. Press the mixture into the baking tray very firmly. I place a second piece of baking paper on top of the mixture and press down with my hands and then the back of a cup.
  7. Place in the fridge for 2 hours. Remove from the fridge and cut into squares.

    This is tasty enough but so crumbly. I wouldn’t make it again.

      Dear Sue. Oh that is a shame, it should not be crumbly once it is set in the fridge. Maybe also the other problem could have been is that it was not pressed into the slice tin tightly enough. Thanks for your feedback 🙂 xx

    Hello, I have bought your book after having it recommended to me. I don’t own a food processor yet and before I buy one I was wondering whether you have ever tried processing any of your ingredients in a Nutri Ninja / Magic Bullet style device? A couple of my friends own these and have used them to make date/energy balls as well as their health drinks.
    I’m keen not to have too much clutter in my kitchen as space is limited and the through of being able to make veg drinks as well as process dates/nuts etc for your recipes appeals (plus the cost of combining two in one rather than having to buy two separate appliances.
    Have any of your readers or you ever used the nutri appliances as processors at all and if so, how did you find them?

      Hi Caroline 🙂 Thanks for stopping by. I don’t have any personal experience with the Nutri Ninja but I have heard that it is good from lots of my readers and can do the job in relation to chopping dates and nuts. It is also compact so doesn’t clutter the kitchen up. I hope you are enjoying the book. xx

    Hi, I have made this twice and it’s very crumbly. I have repress the second try in the fridge. My son loves it and I want him to have it for lunch. Any helpful would be much appreciated.

    Hi. I have made this twice now. In a week. Opps. I took 5 mins or more really pressing it into the tin so wouldn’t crumble. Turned out perfect. I do love and appreciate all your receipes. This is my latest favourite. It is so simple quick and easy. I had a lot of friends try it even when they don’t usually like apricots.

    I’ve just made this and it is delish! I was confused as to the coconut being in twice. I left 1 cup out because it was already a bit crumbly because my food processor couldn’t handle it. I used a touch more coconut oil & it’s come out perfect. Another one the hubby will like I think! Thanks.
