I made your Lemon and Coconut Tart last night. Could you please help me with one of the steps in the recipe. I beat the eggs and it was beautiful and fluffy but as soon as I added the rest of the ingredients it deflated and went runny. When baked the lemon didn’t fill half the tart pan. On this occasion I have cut it into slices and am calling it a lemon and coconut slice (I had to cut off half the crust on the sides), it tastes lovely but I wondered if the lemon filling should have been thicker? Hi Chantelle, thanks for stopping by. The filling is quite runny so that is how it is meant to be. However it should fill the tart pan without any trouble. I am wondering if you tart pan was too large. 🙂

I’ve been planning on making this lemon coconut tart for dessert, It so happens Saturday night we were invited out for dinner, so there was my opportunity. This tart was easy to make and most of all everyone enjoyed it.
