Tropical Stuffed Sweet Potato

Ingredients
  • 4 medium sweet potato
  • 3 rashers of bacon
  • ½ cup pineapple (I used fresh but you could use unsweetened canned)
  • 2 sprigs fresh thyme
  • 1 garlic clove
  • ¼ onion
  • Salt & pepper to taste
Instructions
  1. Pre-heat the oven to 180 degrees.
  2. Wash the sweet potato, leaving the skin on and pierce the skin of the sweet potato with a fork several times.
  3. Place the sweet potatoes in the oven and bake for 40 minutes, turning a couple of times.
  4. In the mean time, cook and dice the bacon, dice the pineapple and onion, crush the garlic and finely chop the thyme. Mix all the ingredients together in a large bowl and set aside.
  5. Once the sweet potatoes are cooked pull out of the oven & let cool until they are cool enough so that you can handle them.
  6. Once the sweet potato are cool enough, cut them down the centre (length ways) & gently scoop out all of the flesh with a teaspoon leaving the skin intact.
  7. Mix the flesh with the other ingredients & sprinkle with salt and pepper to taste.
  8. Fill the sweet potato cases with the mixture & place back in the oven for a further 10 minutes.
