Spiced carrot cake chia pudding

  • 1 carrot
  • 4 tablespoons chia seeds
  • 12 dried dates
  • 2 tablespoons hemp seeds
  • 1 tablespoon currants
  • 1⁄4 teaspoon nutmeg
  • 1⁄2 teaspoon dried ginger
  • 1 teaspoon cinnamon
  • 1⁄2 teaspoon vanilla extract
  • 400 ml coconut milk
  1. Peel and grate the carrot. Roughly chop the dates into small pieces. Place all the dry ingredients in a bowl and mix together. Add the vanilla and coconut milk and stir all the ingredients together until combined. Place in the fridge overnight. Serve in little jars or bowls.
