Raspberry & coconut popsicles

  • 400 ml coconut cream
  • 11⁄4 cups frozen raspberries
  • 1 cup pineapple
  • 2 tablespoons maple syrup
  • 1⁄2 teaspoon vanilla extrac
  1. Blend together all of the ingredients except for 1⁄4 cup of raspberries.
  2. Break up the 1⁄4 cup of raspberries and place in the base of the popsicle moulds. Pour the coconut and raspberry mixture into the moulds and place in the freezer until frozen.
