Sesame & Poppy Seed Crackers

  • 1 cup sunflower seeds
  • ½ cup sesame seeds
  • ¼ cup poppy seeds
  • 1 sprig of rosemary or dried rosemary
  • ½ teaspoon of sea salt
  • 2 tablespoons olive oil
  • ⅓ cup water
  • Sprinkle of sea salt
  1. Preheat the oven to 180 degrees Celsius. Place the sunflower seeds in a food processor & blitz until they are well ground into a fine flour.
  2. Add all of the other ingredients and pulse a couple of times until the mixture is combined & it forms a dough.
  3. Place a large piece of baking paper on the bench & scrape the dough onto the paper. Form a round ball with the dough. Place another large piece of baking paper over the top.
  4. With a rolling-pin, roll out the dough between the 2 pieces of baking paper until it is very thin. Remove the top layer of paper & transfer the bottom layer to a large baking tray.
  5. Score the crackers into the desired size with a knife and sprinkle with salt.
  6. Place in the oven for 15 minutes or until golden brown.
  7. Be aware that the crackers on the edges will brown first and they may need to be removed first once they are cooked.
  8. Remove from oven & allow to cool, then break into crackers and serve with dips or toppings.
