Smoked Salmon

Ingredients
  • 1 cup chopped cos lettuce and rocket or other salad greens
  • 1 handful of cherry tomatoes, halved
  • ½ avocado, sliced
  • 1 radish, thinly sliced
  • 1 slice smoked salmon
  • 1 boiled egg
  • Olive oil to taste
  • Salt and pepper to taste
Instructions
  1. Lay the rocket and cos lettuce on a serving plate. Place the halved tomatoes, sliced avocado and sliced radish around the plate on top of salad greens. Break up the smoked salmon and layer it over the salad.
  2. To boil the egg to perfection, bring a small pot full of water to the boil. Place the egg in the water to simmer for 6 minutes. Remove the egg after 6 minutes and peel under cool water. Place the peeled egg on top of salad.
  3. Drizzle with the olive oil and season with salt and pepper to taste.
  4. SERVES 1
