Sweet Potato Grissini with Goats Cheese, Pomegranate and Maple Walnuts

Ingredients
2 large sweet potato, long and round
1 tablespoon olive oil
1 teaspoon dried rosemary
1 teaspoon dried thyme
1 tablespoon salt flakes
200grams goats cheese
½ pomegranate, seeds
¼ cup walnuts
1 tablespoon maple syrup
Sprig of thyme
Salt & pepper to taste
Instructions
Pre-heat the oven to 180 degrees Celsius and prepare a large baking tray lined with baking paper. Wash the sweet potato leaving the skin on. Slice into 3mm thick slices. Lay on the tray in single layers. Brush with olive oil.
In a small bowl mix together rosemary, thyme and salt. Sprinkle over the sweet potato and place in the oven for 20 minutes or until cooked.
To make the maple walnuts, heat non-stick pan over a low heat. Place the walnuts in the pan and drizzle with the maple syrup. Toss in the pan for 3 minutes, then set aside. Remove the seeds from the inside of the pomegranate and set aside. Roughly chop the walnuts and the goat cheese. Place the goat’s cheese on the grissini first and then top with the walnuts pomegranate and leaves from the thyme. Season with salt and pepper.
