Lemon & Poppy Seed Loaf

Ingredients
  • 2 cups ground almonds
  • ⅓ cup poppy seeds
  • 1 teaspoon baking powder
  • Rind of one lemon
  • 3 eggs
  • ⅓ cup coconut milk
  • 3 tablespoons honey
  • Juice of two lemons
  • 1 teaspoon vanilla extract
Instructions
  1. Pre-heat the oven to 175 degrees Celsius and line a loaf pan with baking paper.
  2. In a large bowl combine all of the dry ingredients, ground almonds, poppy seeds, baking powder and lemon rind.
  3. In a separate bowl whisk together the eggs, coconut milk, honey, lemon juice and vanilla extract.
  4. Combine the dry and wet ingredients and mix gently.
  5. Pour the batter into the lined loaf pan and place in oven.
  6. Bake for 50 minutes or until a skewer comes out clean.
