Mango & Macadamia Muffins

Ingredients
  • ⅔ cup coconut flour
  • 1 teaspoon baking powder
  • Pinch of salt
  • 4 eggs
  • ¼ cup water
  • ¼ cup honey
  • 1 cup diced mango
  • ½ cup macadamia nuts
Instructions
  1. Pre heat the oven to 180 degrees and grease a medium sized muffin pan.
  2. Place the coconut flour, baking powder and salt in a large bowl and combine the ingredients.
  3. Add the eggs, water, honey and diced mango combine all ingredients to make the muffin batter.
  4. Add the macadamia nuts to the batter and mix through.
  5. Pour the batter into the muffin pan and place in the oven for 30 minutes or until the skewer comes out clean.
