Raspberry & Coconut Chia Pudding

  • 400 ml coconut cream
  • 1 cup frozen raspberries
  • 2 tablespoons maple syrup
  • 1 teaspoon vanilla extract
  • 4 tablespoons chia seeds
  1. Place the coconut cream, raspberries, maple syrup and vanilla extract in a blender or food processor and whizz on high until the mixture is smooth, similar to a smoothie.
  2. Add the chia seeds and stir through to combine ensuring there are no lumps.
  3. Pour the mixture into four serving jars and place in the fridge to set for a minimum of 3 hours.
  4. Enjoy!
