Perfect Cauliflower Rice

  • ½ head of cauliflower
  • 1-2 tablespoons olive oil
  • 1 clove garlic, crushed
  • Handful of fresh coriander, chopped
  • Sprinkle of salt
  1. Chop the ½ cauliflower into about 8 - 10 pieces and place half of in in the food processor. Pulse the processor a few times until the cauliflower resembles rice and set aside.
  2. Repeat with the rest of the cauliflower pieces until it is all processed into rice.
  3. Heat a large wok over a medium heat with 1 tablespoon of olive oil in it.
  4. Saute the crushed garlic for 1 minute and then add the cauliflower rice.
  5. Continually stir and heat through the cauliflower for 4 - 5 minutes. If the rice looks dry add a little more oil or a touch of water.
  6. Sprinkle with salt to your taste and stir through the fresh coriander.
  7. Serve as a side dish or with a stew or curry.
