Balinese Satay Chicken

  • Chicken
  • 500 grams chicken, cubed
  • 4 garlic cloves
  • ½ red onion
  • 1 tablespoon fresh or ground turmeric
  • ½ teaspoon coriander, dried seeds
  • ½ teaspoon cumin, dried
  • Pinch of salt
  • 1 tablespoon olive oil
  • Peanut Sauce
  • 250 grams of raw peanuts
  • 1 teaspoon maple syrup
  • 2 cloves of garlic
  • Chillis, however many you want
  • 200 ml water
  • 1 teaspoon tamarind paste
  • Oil to cook peanuts
  1. To make the chicken skewers, push 5 pieces of chicken onto each skewer and set aside.
  2. Place the sliced garlic, onion, turmeric, coriander seeds, cumin powder and salt into the mortar and pestle (or blender) and grind to a very smooth paste.
  3. Brush the paste onto the skewered chicken and leave to marinate while you make the sauce.
  4. To make the sauce take two large cloves of garlic and the peanuts and fry them in the oil in a wok for a few minutes until fragrant. Drain the peanuts and garlic.
  5. Slice the chilli add to the mortar and pestle along with the peanuts and garlic and grind down to a fine paste. Or you can use a blender/food processor.
  6. Once very fine, all the water and tamarind, combining all ingredients.
  7. Place in a saucepan and simmer over a medium heat for five minutes until the sauce thickens.
  8. While the sauce is simmering you can cook the skewers by placing them on a BBQ or in a pan. (over hot coals is ideal)
  9. Remove the satay sauce from heat after five minutes and once the skewers are cooked remove from heat and enjoy!
