Zucchini Bites

  • 3 eggs
  • ⅓ cup coconut milk
  • 2 tablespoons olive oil
  • ¼ teaspoon baking soda
  • ¼ cup coconut flour
  • ½ teaspoon cumin powder
  • Pinch of salt & pepper
  • 2 zucchini, grated
  • 1 tablespoon olive oil for cooking
  1. Wash & grate the zucchini, squeeze out the water from the zucchini so they are not to moist.
  2. In a bowl whisk together until combined the eggs, coconut milk, olive oil, cumin powder and salt.
  3. Add the baking soda and the coconut flour to the wet mixture, gently mix together but be very careful not to over beat.
  4. Add the drained zucchini
  5. Heat a large pan over a medium to low heat with a splash of olive oil .
  6. Drop a teaspoon size amount of the zucchini batter into the pan and repeat until you have 6 - 8 bites cooking in the pan.
  7. Once they are brown gently flip each bite and allow the other side to brown.
  8. Remove from pan and set aside, repeat until you have used up all the batter.
  9. Serve while still warn straight from the pan with rock salt or top with your favourtie toppings.
