Salted Chocolate & Pistachio Slice

  • 1½ cups raw cashew nuts
  • 1 cup dried dates
  • 2 tablespoons cacao powder
  • Pinch of salt
  • 1 tablespoon of coconut oil
  • ½ cup pistachio nuts, crushed
  1. Place the cashew nuts in the food processor and blitz until they are a smooth butter consistency.
  2. Add the dates and blitz until the mixture is very fine. You may need to scape own the side a couple of times.
  3. Add the cacao, salt and coconut oil and blitz until combined.
  4. Then finally add the crushed pistachio nuts by mixing them into the chocolate mixture.
  5. Line a baking dish with some baking paper and press the mixture into the base.
  6. To make really flat and smooth, once you have pressed into a dish, place a piece of baking paper on top and smooth over with a rolling pin or heavy cup.
  7. Place in the fridge for a minimum of one hour, them cut into squares.
