Sweet Potato, Tuna & Chilli Patties

  • 4 medium sweet potato
  • 1 onion
  • 1 clove garlic
  • 1 red chilli
  • 1 tablespoon olive oil
  • 2 cans of tuna in spring water
  • 1 handful fresh basil
  • Salt & pepper to taste
  • 2 tablespoons olive oil or coconut oil
  1. Peel the sweet potato and cut into quarters, boil in a saucepan of water over a medium heat until they are tender. This will take about 20 minutes.
  2. In the mean time, finely chop the onion, crush the garlic, finely slice the chilli and basil.
  3. In a small frying pan over a medium heat place 1 tablespoon of olive oil.
  4. Add the onion and garlic, saute for a few minutes until translucent then add the chilli and cook for 1 more minute, then take off the heat.
  5. Once the sweet potato is cooked, drain and mash using a fork or potato masher.
  6. Add the two cans of tuna, basil, salt, pepper and onion & chilli mixture.
  7. Mash all the ingredients together.
  8. Heat a large pan on a medium heat with some of the remaining olive or coconut oil.
  9. Form the patties by using a large tablespoon and place 3 patties in the pan to cook.
  10. Flip once the pattie is golden brown and repeat on the other side. Repeat until they are all cooked.
  11. Serve with salad. Enjoy!
