Raw Anzac Bikkies

  • 1 cup raw cashew nuts
  • 1 cup shredded coconut
  • ½ cup sultanas
  • ½ cup sunflower seeds
  • Pinch of sea salt
  • 2 tablespoons of shaved almonds
  • 1 tablespoon honey
  • 1 tablespoon coconut oil
  1. In the food processor place the cashew nuts, coconut, sultanas, sunflower seeds, sea salt and blitz until it resembles a fine crumble.
  2. Add the honey and coconut oil and whizz together in the food processor until fully combined.
  3. At this point add the shaved almonds and mix until fully combined.
  4. Roll the mixture into balls and place on a tray lined with baking paper.
  5. Press each ball down with a fork to make a bikkie.
  6. Place the biscuits in the fridge and set for a minimum of 1 hour.
