Chipotle Chicken Meatball Tacos

  • Meatballs
  • 500 grams of chicken mince (ground chicken)
  • ½ onion, diced
  • 1 garlic clove, crushed
  • 1 ginger piece (size of garlic clove), crushed
  • ½ cup fresh coriander, chopped
  • Salt & pepper to taste
  • Olive oil, for frying
  • Sauce
  • 5 ripe tomato, diced (canned if not fresh available)
  • ½ onion, diced
  • 1 garlic clove, crushed
  • 1 tablespoon tomato paste
  • 1 teaspoon turmeric
  • ½ teaspoon of paprika
  • ½ teaspoon ground ginger
  • ¼ teaspoon ground cardamon
  • ¼ teaspoon ground chilli
  • Salt to taste
  • 1 tablespoon olive oil
  • Taco Filling
  • Cos or romaine lettuce cups
  • 2 tomatoes, diced
  • 1 carrot, grated
  • ½ capsicum, diced
  • 1 avocado, diced
  • 3 sprigs fresh coriander
  1. To make the meatballs place the diced onion, crushed garlic, crush ginger and chopped fresh coriander in a large bowl and mix together.
  2. Add the chicken mince, salt and pepper and with your hands mix all the ingredients together until combined.
  3. Roll the mixture into meatballs using approximately a teaspoon size of the mixture for each meatball.
  4. Heat a large pan over a medium heat with a table spoon of olive oil. Gently cook the meatballs turning as required.
  5. In the meantime you can prepare the sauce.
  6. Heat the olive oil in a medium sized saucepan over a medium heat.
  7. Add the onion, garlic, ginger and all the spices and cook until the onion becomes translucent.
  8. Add tomatoes and tomato paste, reduce down for 10 minutes, if it gets a bit dry because the tomatoes are not juicy, add some water.
  9. On a large plate for the table, lay out the lettuce leaves, grated carrot, diced capsicum, diced avocado, diced tomato and fresh coriander.
  10. Remove the cooked meatballs from the heat and place in a separate bowl for the table.
  11. Remove the sauce from the heat and serve in a smaller bowl with a spoon.
