Coconut & Lemon Bread

  • 2 cups desiccated coconut
  • ⅔ cup coconut flour
  • 1 teaspoon baking soda
  • 2 lemons
  • 3 tablespoons honey
  • 6 eggs
  1. Turn the oven on to pre-heat at 180/350 degrees.
  2. In a food processor place the dry ingredients & whiz on high until combined & flour like.
  3. Grate the rind of one lemon & add to the dry ingredients.
  4. Juice the two lemons.
  5. In a bowl combine the wet ingredients & whisk.
  6. Add to the dry ingredients & whiz in food processor until combined.
  7. Line a loaf tin with baking paper & pour the batter into the loaf tin.
  8. Place in the oven for 25 -30 minutes or until the skewer comes out clean.
  9. Enjoy.
This bread can be sliced up & frozen, them toasted.
