Decedent Chocolate Pudding with Rich Chocolate SauceOn Friday night we were having a relaxed night at home & we just felt like a treat. Before my real food pledge, I would whip up a chocolate self saucing pudding that my mum taught me to make using standard processed baking ingredients. I wanted to re-create that tradition using real food ingredients, so I put my thinking cap on & threw some ingredients together to make these little puddings. Everyone loved them & told me that they tasted even better than the old pudding I used to make, so it is a winner! And what makes this dessert even more of a winner is that it is gluten, grain & sugar free.

This recipe is quite quick & easy. It will make 12 little puddings. You can freeze them for another time if that is too many at once, or it is perfect for a dinner party.

INGREDIENTS PUDDINGS

4 tablespoons of chia seeds
1 cup of water
1 cup almond meal
1 cup dates
1/2 cup cacao powder
1 teaspoon bicarb/baking soda
3 eggs
100 grams of butter or coconut oil

DIRECTIONS PUDDINGS

  1. In the cup of water, soak the chia seeds for approximately 15 minutes
  2. Preheat the oven at 180/350 degrees
  3. In the food processor place the almond meal & dates. Whiz until the mixture is fine
  4. Place mixture in large bowl, add the cacao & bicarb, stir until combined
  5. Add the wet ingredients – the jelly like chia seeds in water, melted butter/coconut oil & eggs, mix until combined with a whisk
  6. Greece a muffin pan & pour the mixture into the pans, place in oven
  7. Cook for 12 -15 minutes until a skewer comes out clean
  8. While the puddings are cooking you can make the sauce below

INGREDIENTS FOR CHOCOLATE SAUCE

10 medjool dates
2 tablespoons butter or coconut oil
2 tablespoons cacao
1 cup of water

DIRECTIONS FOR CHOCOLATE SAUCE

  1. In a sauce pan, place the pitted dates in 1/2 cup water
  2. Simmer gently for 3 minutes
  3. Add the butter/coconut oil & cacao, gently simmer for a further 3 minutes adding more water as needed
  4. Place the simmered mixture into the food processor & blitz until smooth
  5. You may want to add a little more liquid depending on how thick or runny you want your sauce
  6. Serve warm sauce over the puddings & enjoy!

        Yes so pleased it covers dessert for several days! I’ve also never used chia seeds before – but I loved the crunch they added!
