Crispy Skin Salmon With Mango Salsa

At our house we have salmon for dinner at least once a week, we all love salmon and it is a super quick and healthy meal. I find that it is a really simple dish to make when I am pressed for time at the end of the day. Salmon can be purchased, fresh and in advance as it lasts really well in the fridge.

This dish is my favourite, it is so delicious with gorgeous summery flavours. Mango, avocado and coriander go so well together.

If you are having guests over for dinner, this is a great meal to serve that will really impress. It is so low stress and so tasty that your guests will think that you have been slaving in the kitchen for hours!

Serves: 4
Ingredients
  • 4 salmon steaks (skin on and all the same size)
  • 1 tablespoon olive oil Pinch of salt and pepper
  • Mango & Avocado Salad
  • 1 mango
  • 1 avocado
  • ½ long red chilli
  • 1 cup of coriander
  • ½ lemon (juice)
  • 1 tablespoon of olive oil
  • Salt and pepper to taste
Instructions
  1. Heat a large pan on the stove over a medium heat. Sprinkle the salmon with salt and pepper to taste.
  2. Add the oil and once it is hot, place the salmon fillets in the pan skin side down.
  3. After 5 minutes the skin should be crispy; turn the salmon to brown the other side.
  4. It depends how large your fillets are as to how you like your salmon cooked as to how long you will need to cook them. I work on 4 or 5 minutes per side for a medium rare salmon.
  5. Remove from the pan and serve with the mango and avocado salad.
  6. Mango & Avocado Salad
  7. Peel both the avocado and mango. Cut the cheeks away from the mango and run the knife through the mango flesh make a grid then cut the flesh away from skin. Place in a bowl.
  8. Remove the stone an from the avocado, peel the skin away and dice. Add to the bowl.
  9. Finely slice the red chilli and roughly chop the coriander. Add to the bowl. Juice the lemon into the salad and add along with the olive oil and salt and pepper to taste.
  10. Combine all the ingredients with a fork. Serve with the crispy skin salmon.
