These are delicious as well as being grain, gluten, dairy and sugar free. I make hot cross buns every Easter because I love the beautiful aroma that drifts around the house as they bake and it puts me in a Easter kinda mood.
This year I decided to put a spin on my Hot Cross Buns by making them with cranberry’s rather than raisins. They turned out to be holy moly yummo! I made a batch of 8 about 30 minutes ago, took the photos of them and they are nearly all gone, so that is an indication of how yummy these are!
- 2 tbsp chia seeds
- ¼ cup water
- 1 cup almond meal
- ¼ cup coconut flour
- 1 cup dried dates
- ¼ cup dried cranberries
- 2 teaspoon cinnamon
- 1 teaspoon ginger
- 1 teaspoon baking soda
- 1 pinch of salt
- 2 tablespoons apple cider vinegar
- 3 eggs
- 2 tbsp oil, (olive,coconut)
- Cross
- 2 tablespoons coconut flour
- ⅔ cup water
- Preheat the oven to 180 degrees.
- Soak the chia seeds in the ¼ cup of water.
- Chop finely ¼ cup dates and set aside.
- Put the remainder of the dates and all other dry ingredients into the food processor & blitz until the dates are well broken down.
- Into a mixing bowl pour the dry ingredients and chopped dates and cranberries.
- Beat eggs, soaked chia seeds, apple cider vinegar and oil until well combined.
- Combine with dry ingredients until well combined.
- Put mixture into a medium sized muffin pan and bake for 20 – 25 minutes or until firm.
- To make the cross - While the buns are cooking in the oven make a white paste out of 2 tablespoons cup of coconut flour and ⅔ cup of water, or until it is a firm paste that you can pipe onto the buns.
- Place the white paste in a plastic zip lock back & cut a small corner of the bag so that you can pipe the cross onto the buns.
- Pull out of the oven after 10 minutes & bag the cross onto the buns with the coconut flour paste.
- Enjoy & Happy Easter xx

Hi There Allana. Thanks for stopping by and that is a great question! Almond meal and ground almonds are essentially the same thing. I personally use 1 cup of whole raw almonds and grind them myself as it is less expensive and better for you, because sadly sometimes things are added to the pre-made almond meal to stop it from clumping etc. So to answer your question in short, yes you can use ground almonds, that is exactly what I used to make this recipe. What could I use instead of Almond meal as family has nut allergy.

Hi Ruth. You could use more coconut flour but not a full cup. At a guess 1/2 a cup of coconut flour instead of almond meal. If that seems to think add another egg but it should be about right. Let me know how you go Ruth. 🙂
