Cranberry Energy Bites

No Bake Energy BitesCameron, my husband has been training for his bronze medallion, which is a surf lifesaving practical course which enables you to volunteer as a surf lifesaver here in Queensland. It is very intensive, he has been spending 4 hours training on a Saturday morning, in the surf and on the sand in the scorching heat. Before he leaves in the morning, he has been eating a banana and a healthy variety of muesli bar. Today I thought that I would make  an energy packed treat that would be perfect for him to eat before and during his training.

These little bites are super tasty and could also be great for breakfast on the go or as a snack during the day whether you are training or not. They are really easy to make being no bake, they are also gluten, diary and sugar-free and packed with super foods.

Serves: 36
Ingredients
  • 1 cup dried dates
  • 1 cup almonds
  • 1 cup shredded coconut
  • ½ cup sunflower seeds
  • ½ cup dried cranberries
  • ¼ cup chia seeds
  • ¼ cup coconut oil
  • Pinch of salt
Instructions
  1. Place the dried dates and almonds into the food processor and blitz until chopped, leaving a few chunky bits.
  2. Add the remainder of the ingredients and blitz to combine, but keeping the mixture chunky.
  3. Spoon the mixture into mini muffin cases, (pan of 24+ required) press into each pan until firmly packed down, with wet fingers.
  4. Place in the fridge and let set for one hour. Keep in the fridge in a airtight container or jar.

    I love your receips and I’m off to buy your book tomorrow! Will these taste OK without the almonds? We are not allowed nuts at school and something like this would be a great lunch box item without the nuts.

      Hi Amie. Thanks for stopping by. Yes they would be fine but you will need to bulk them out with something. Maybe sunflower seeds, pumpkin seeds, apricots, or more coconut. I hope that you love the book xx

    Please help. Do you melt the coconut oil or is it left in the hard white stage when you buy it?
