Coconut & Lemon Bread

Lemon & Coconut Bread
This bread will fill the house with the most amazing smell & full your tummy with happiness! It is lovely served warm straight from the oven or toasted. The wonderful flavors of honey, lemon & coconut swirl around in your mouth & it is a very filling, satisfying breakfast or snack. It is best served with a big dollop of grass fed butter!

Serves: 8
Ingredients
  • 2 cups desiccated coconut
  • ⅔ cup coconut flour
  • 1 teaspoon baking soda
  • 2 lemons
  • 3 tablespoons honey
  • 6 eggs
Instructions
  1. Turn the oven on to pre-heat at 180/350 degrees.
  2. In a food processor place the dry ingredients & whiz on high until combined & flour like.
  3. Grate the rind of one lemon & add to the dry ingredients.
  4. Juice the two lemons.
  5. In a bowl combine the wet ingredients & whisk.
  6. Add to the dry ingredients & whiz in food processor until combined.
  7. Line a loaf tin with baking paper & pour the batter into the loaf tin.
  8. Place in the oven for 25 -30 minutes or until the skewer comes out clean.
  9. Enjoy.
Notes
This bread can be sliced up & frozen, them toasted.

    This sounds delish, but cant have eggs. Any suggestions on substitution for the 6 eggs?

      Hi Alice, thanks for stopping by. Hmmm I don’t know what you could use. I have tried to bake this type of bread before without eggs when I have run out but it turns out very crumbly. You could try coconut milk & oil or butter but I am not sure how that will work. πŸ™‚

    Ok to use normal flour in place of coconut flour? Plain? Self raising?

      Hi Joelyne. Thanks for stopping by. Coconut flour is very absorbent, much more than normal flour, so you would have to maybe double it, but I can’t tell you exactly as I don’t use any wheat flour in any of my recipes.

    i tried this and it did not turn out! πŸ™ it didnt turn brown on the outsides. very moist (too much i think). left it in for longer than asked because it didnt look right… what am i doing wrong!? this is the 3rd time ive tried making grain free bread… thanks

      Awww Amanada that is a shame. I am not sure why it is not working out for you. Maybe your oven is not the best, or you could try cooking at a lower heat for longer.

    Hi! Just made this, its in the oven now and the dough came out very thick, not “pourable” almost like cookie dough, is that right? If not what could it be, the only think I can think of is my eggs were on the small side.

      Hi Erika. It is quite a think mixture, not like cookie dough but you can’t pour it, you have to scoop it out into the loaf tin. Maybe your eggs were on the small side. You could try again and add one more egg. Good Luck. πŸ™‚

      Hi Sarah. Thanks for stopping by. No I don’t but if you wanted to work it out you could hop online and punch in each of the ingredients to a nutritional calculator and then work out how many serves and go from there. Just a thought of how you could work it out. πŸ™‚ xx

    I made this bread and it turned out ok, I think. It’s very dry, almost hard to swallow and the taste is also a little different than I expected; not sweet at all. This is the first bread of its kind that I’ve made, so I have nothing else to compare it to. Maybe next time I’ll add some coconut oil..

      Hi Patty. Thanks for stopping buy and trying a recipe out. Maybe it was cooked a little too long and that is why it is dry. You could try to add coconut oil that would work. Thanks for your comments, I love hearing how my recipes turn out for other people. πŸ™‚

      Hi there. Yes it can be or you can slice it up and then freeze it so that it is easier to take one slice at a time πŸ™‚

    I made this last night to go with dinner. This bread is fantastic!! My kids loved it. It is delectable if you add honey on the warm slices. We will be making this again.

          Hi There. I have never used a nutribullet so I am unsure of the size or how effective it would be. Sorry I don’t have the answer on that one. πŸ™‚

    hi there, my loaf turned out orange?? Probably from the egg yolks, I definately only used 6 tho. Your loaf looks very white compared to mine???

      Hi Sarah. I am not sure why that would be except maybe your eggs were super yellow/orange. As long as it tasted really good, that is the main thing πŸ™‚ xx

    Hi Caralee, thanks for this (and all your other) beautiful recipes. I’ve made my first batch and devoured it with some natural yogurt – delicious! It was a little drier than expected, so next time I’ll bake it for a little less time. If I was to add some coconut oil (as you suggested in a comment above), how much would you recommend that I add?

      Hi Sumi. I am glad that you are enjoying the recipes. Maybe add 1/4 cup of coconut oil to see if that helps keep in moist. xx

    I made this recipe in muffinmalls. After baking i put them directly in platic bags , so they will not be dry. I will use them for muffins, with coconut cream and mangoyelly made from mango and agar agar. Instead of lemonjuice i used orange juice because of alergy for lemon. I used agavesirop instead of honey.
