Coconut & Berry Omelette

This quick easy breakfast is super delicious and light. It is a sweet omelette rather than a savoury one, but it works! This recipe is from my first book Real Food Pledge, I was flicking through it the other day and was reminded about how much I love this old favourite! I am going to treat myself to this for breakfast in the morning, I can’t wait! Try it and let me know what you think in the comments below.

Serves: 1
Ingredients
  • 1⁄2 cup fresh or frozen berries (defrosted) 2 eggs
  • 2 tablespoons of coconut milk
  • 1⁄2 teaspoon of coconut oil
  • Sprinkle of cinnamon
  • Sprinkle of nutmeg
  • Drizzle of honey
Instructions
  1. In a small bowl whisk the eggs, coconut milk and a sprinkle of cinnamon and nutmeg until combined.
  2. Heat the coconut oil in a small pan over a medium heat on the stove.
  3. Pour the whipped egg mixture into the pan, as the edges cook shift the egg in to the center, letting the runny egg mixture run out to the edge of the pan.
  4. Place the berries on top of the egg in a line through the center of the egg and let the egg set.
  5. Fold over each side of the egg on top of the berries.
  6. Slide the omelette out onto a plate & top with fresh berries, coconut yogurt and a drizzle of honey.
