I had the pleasure of creating a delicious celebration cake for Good Magazine. I made a Healthy Hummingbird Cake, which is a favorite of mine. The cake is lovely, moist and chocca full of pineapple and coconut yumminess! You can have your cake and eat it too with healthy options like this cake. I love how amazing this recipe turned out!

I often get asked how I manage being a busy mum, full time lawyer and running a small law practice as well as my food blog, Real Food Pledge. This cake has a story about that… I made this cake for Jo in the evening before and then we both had to juggle events the next day to get the cake to her place which is 40 minutes away from where I live. It was a typical day of where you just have to make it work!
That day I had to go to the airport to fly out to NZ. Jo is also a busy mum, so she sent her husband Corey to meet me at a cafe near the airport. I was juggling the kids, luggage and the cake. I handed the cake over to Corey and he kindly delivered it to Jo where she juggled her baby, having family over to visit as well as taking the photos of the cake! When you love what you do, you just make it happen!
