I say that it is completely acceptable to have chocolate for breakfast when it is as healthy as this rich cacao chia seed pudding. 🙂 I make this for breakfast when I need a change from my standard veggie omelete. At the supermarket I have spotted chia seed products like chia pods for sale, seriously instead of buying them make your own. Chia puddings are so easy to make, more affordable than pre-made and much better for you.
Everyone raves about chia seeds, that is because it is the richest known plant source of Omega 3, the essential fatty acid (almost 20%) and it is one of the most powerful, functional, and nutritious superfoods in the world! Chia seeds are also rich in dietary fiber, antioxidants, protein, calcium, iron, vitamins and mineral. Chia seeds absorb 17 times their weight, that is why you don’t need many tablespoons of chia seeds to make this recipe. If you have never made chia seed pudding before it may seem a bit strange at first but it really is a great breakfast option so give it a go. Once you know how to make a basic recipe you can add any flavour you like such as berries, vanilla or mango.
Top with any of your favourite fresh berries, shredded coconut or coconut yoghurt.
- 3 tablespoons of chia seeds
- 1 can of coconut milk
- 2 tablespoons of cacao or cocoa (cacao is less processed & better for you)
- 2 tablespoons of cacao nibs
- 1-2 tablespoons of honey (depending on how sweet you like it)
- Put all the ingredients in a large bowl & whisk until combined ensuring there are no cacao lumps.
- Pour into little glasses or just set in the bowl that you mix it in.
- Place in the fridge over night or for at least a couple of hours.
- Enjoy!

Hmm, this looks so yummy that I’m going to try making this even though I don’t have any cacao nibs!
Thanks for stopping by. This is really nice, you don’t have to add the cacao nibs, it will be just as good without them. Enjoy! 🙂
Just wondering how well they store? I usually do a lot of meal prep, do you think they could last 5 days or would I need to freeze them? Would they freeze ok?
Hi Laura. Chia seed puddings last as long as the milk usually would, so a few days in the fridge. I have not tried to freeze the puddings, but I have seen recipes for frozen chia seed pudding pops, so you could try it and see how it goes. :)x
Hi. Can you tell me how large the can if coconut milk is that you use for this recipe? Many thanks.
Hi Peta. 425mls is the can size that I use.
I made this for the family xmas morning an honestly everyone raved about it. well actually I made them the night before an it made things much easier. Thanks for that, I made extra an the neighbours got them well I do not think I will hear the end of it already ordered next years
Hi Lou. I made the same thing for my Christmas breaky too. So easy and delish. I am glad that your family loved it! 🙂 xx
Hello. Do you know any paleo puddings that don’t use coconut or chocolate or dairy? I’m allergic to them and would really love to find a sweet tart treat. Thank you so much for any suggestions.
Hi Adrienne. Basically you can use any liquid and any flavour to make a yummy chia pudding. The ratio is 3 tablespoons of chia seeds to 1 cup of liquid. For example, 1 cup almond milk, 3 tablespoons of chia seeds and to flavour it how about throwing in 1 grated apple, some sultanas and a sprinkle of cinnamon. Or try berries, grated carrot or mango. You can get creative and have fun with chia seeds. Enjoy.
