This chia pudding is so delicious and literally takes 3 minutes to whisk together. We have enjoyed having these cute little jars of goodness made up in the fridge this week. Cameron and I have been eating them for a quick breakfast option and the kids have been eating them for pudding. That’s how good they are!
They will keep in the fridge for up to 5 days, if they last that long before you eat them!

Ingredients
- 1 can of coconut milk
- 2½ tablespoons chia seeds (black or white)
- 2 tablespoons cacao powder
- 1 - 2 tablespoons natural maple syrup (depending how sweet you like it)
- 1 cup mixed berries (fresh or frozen)
- 2 tablespoons shredded coconut
- Dash vanilla extract
Instructions
- Pour the coconut milk into a large mixing jug.
- Add the chia seeds, cacao, maple syrup & vanilla extract. Whisk until combined.
- Add the berries and coconut and stir through.
- Pour the mixture into 4 jars to set.
- Place in the fridge over night or for a minimum of 3 hours. Enjoy!

Made these ,caramelised bananna on top with rasberries and shredded coconut.
